Aatukari ( Mutton ) Dum Biryani

Get Aatukari  (Mutton) Wash and drain well. Then Add Ginger garlic paste, salt, turmeric, biryani masala, red chilli powder, lemon juice, curd, oil then mix and marinate well. Then marinate with atleast 45 mins to 4 hours.

You can slice the onion and chilies, soak the rice for 30 to 40 mins. Take a pan or pressure cooker and heat that eventually and add ghee or oil and add spices. Immediately add sliced onion and chilies, and salt then fry then evenly until golden brown. Set Aside half of this.

Transfer the marinate Aatukari (Mutton or lamp meat) then, add chopped mint and coriander leaves. Next begin sault on a very low flame for 3 to 4 mins. Cover and cook 10 mins on the low flame...  Either pressure cooker cook it for 2 to 3 whistles or continue to cook in the pot until the meat is soft and tender. Don’t add any water to cooking this.  If cooking in pot make sure you stir occasionally to prevent burning.

While the meat cook, Bring water to boil and add bay leaf. Jeera, cardamom, cloves, cinnamon. And add salt then, add rice and cook all dente. The rice must be cooked completely but you must feel the bite. Then, drain it completely in a colander. When the mutton (Aatukari) Soft cooked, you will be left with the thick gravy. Add the rest of the curd to this. Then add fired onions, coriander and mint leaves. Mix together check the salt and spice by tasting. You can adjust by adding salt and green chillies. Layer the rice, coriander and mint leaves. Add ghee as well.

Finally cover the pot with a foil or kitchen cloth. Place a heavy lid over the pot. If you don’t have a heavy lid, place any lid and a heavy pot filled with the water over the lid. Then heat old tawa / pan until very hot. Place this biryani pot ovet the pan. Lower the flame and cook for the 15 mins. Switch off the stove and allow the rest for 15 mins.
